Dinner is served!



Tuesday April 3
Rainy Day Dinner

Chicken and Rice Casserole
2 cooked chicken breasts, cubed and/or shredded
rice (1 cup uncooked, prepare as directed)
1 can cream of mushroom soup
1/2 cup cooking sherry
1/2 cup sour cream
1 cup chicken stock (can use more or less until sauce reaches desired consistency)
salt
pepper
Jalapeno pepper jelly

Mix soup, sherry, and stock in a sauce pan until it comes to a boil, turn down heat and add sour cream, stir until it is mixed in with the sauce. Add chicken, rice, salt and pepper. Serve hot with a dollop of Jalapeno Jelly .

Green Beans
I like to drop fresh green beans into boiling water for just about 1-2 minutes, then rinse them in a colander with ice cold water. Add salt and pepper and serve. No butter needed!

Corn Bread
2 boxes Jiffy corn bread mix
2/3 cup Buttermilk
2 eggs
1/2 cup canned creamed corn

3 tbs butter

heat oven to 350, while oven is heating, place butter in a 9x13 cake pan and place it in the oven to allow the butter to melt. Mix all remaining ingredients, remove pan from oven, place batter in pan on top of melted butter. Bake @ 350 for 15-20 min. So good, kids LOVE it!

Salty Caramel Crunch Bars

These are DANGEROUSLY good!

Salty Caramel Crunch Bars

90 Club crackers, such as Keebler brand

1 cup unsalted butter
2 cups graham-cracker crumbs
1 cup firmly packed brown sugar
1/3 cup sugar
1/2 cup whole milk
1 teaspoon vanilla extract
1 cup butterscotch baking chips
1 cup chocolate-hazelnut spread, such as Nutella

Directions

Put on your Hot Mama Apron. Line a 9x13-inch pan with 1 layer of crackers, cutting as needed to fit.
In a large saucepan, melt the butter over medium heat. Add the graham-cracker crumbs, both sugars, milk and vanilla. Bring to a boil. Boil for 5 minutes, stirring constantly. Remove from the heat and spread half of the cooked mixture over the prepared crackers. Place another layer of crackers on top. Spread the remainder of the cooked mixture over the crackers. Place a last layer of crackers on top.
In a small microwave-safe bowl, carefully melt the butterscotch chips, using short bursts of power, stirring in between. Stir in the chocolate-hazelnut spread until smooth, heating slightly if needed to make mixture spreadable. Evenly spread the chocolate mixture on top of the last layer of crackers and refrigerate for about an hour to set. Cut into bars.
Makes approximately 54 bars.
