Spice Rubbed Pork Tenderloin

This recipe comes to us from Kelly Wilson. Kelly is a great cook and has a very unique business (Kelly Wilson Antiques) monogramming antique plates. Kelly says this recipe is a hit with kids and adults, easy enough for a weeknight and nice enough for company.


Spice Rubbed Pork Tenderloin

3 t. sugar

2 t course ground pepper

2 t kosher salt

1 t. ground coriander

1/2 t. ground cloves

2 pork tenderloins

1/4 c. olive oil

1/4 c. maple syrup

Put on your cute and oh so practical HOT MAMA APRON. Combine sugar and spice and rub all over tenderloins. Cover and refrigerate at least 6 hours or overnight.

Whisk together oil and syrup, reserving a couple of tablespoons. Place tenderloins in Pyrex and liberally brush both with oil and syrup. Roast 20 minutes at 375. Baste with oil and syrup and roast for another 25 minutes or until meat thermometer reads 155. Remove and let rest 5 to 10 min. Dribble with reserved sauce.
