GRITS!

We just returned from The Atlanta Gift Market. While there, we ate at Dogwood on Peachtree Street; it was delicious! Honestly one of the best meals I have EVER had. They have a GRITS bar, yes GRITS with pimiento cheese, pulled pork grits, and beer battered fish with malt vinegar grits. Need i say more? OK I will...how about apple bacon fritters served over mashed sweet potatoes and buttermilk fried boneless chicken served with green beans and mac and cheese. YUM! I have decided that my family does not eat enough grits. Below is a recipe for Jalapeno Cheese Grits, thanks to my mom, Pat Rosenthal for sharing and if you are ever in Atlanta, Dogwood is a must!

Hot Damn Grits

2 C grits (uncooked)
8 C water
2 t salt
8 t butter (one stick)
32 oz Velveeta
jalapenos to taste
Cook grits according to directions on the box,
you can use either quick grits or regular grits
Enjoy!

The Jenny Apron

Busy Mama Supper

Thanks to Laurie Stone from Lizella, Georgia for sharing this delicious recipe. It takes almost no time to make, it is inexpensive and guaranteed to become a family favorite!

Busy Mama Supper

1- 12.5 oz can Tyson Chunk chicken , drained
1 heaping cup instant rice
1 can cream of mushroom soup
1-1/2 soup cans water
1/2 stick butter
parmesan cheese (in green can)

Put on your favorite HOT MAMA APRON. Preheat oven to 350 and put 2 qt baking dish in there with butter until melted.
Meanwhile, in a bowl flake the drained chicken with a fork real good. Add soup, water, and rice.
Pour into hot 2 qt baking dish on top of the melted butter.
Return to oven and bake 25 minutes until lightly browned around edges.
THIS WILL DISAPPEAR.
May double recipe, use slightly larger baking dish and increase baking time a little. ENJOY!

Happy New Year and Buttermilk Pie

We at Jen Rosie Designs hope you had a great holiday and are off to a wonderful 2011! We have lots of new products coming out in the next couple of weeks, including the full apron you all have been asking for! Stay tuned...and in the meantime enjoy this delicious recipe for Buttermilk Pie! Thanks to Kristi Eakin Savage for sharing!

KNOCK YOUR SOCKS OFF BUTTERMILK PIE RECIPE

2-3/4 c sugar

4 eggs

2t vanilla

3T flour

¾ c. margarine, melted

1-1/2 c. buttermilk

½ c. crushed graham crackers

¾ c. chopped pecans

Two 9 inch pie crusts unbaked (Katie you can make your own crust! ya little chef – the rest of us can use store bought crust)

Preheat oven to 325.

In a large bowl mix together sugar and eggs, then add vanilla and flour. Stir in margarine and buttermilk. Do not beat—gently stir. Fold in crushed graham crackers and pecans. Pour into pie crusts, dividing mixture evenly between the two.

Bake 45 minutes or until center of each pie is firm when tested with a knife. ENJOY!
